Also known as eye of loin, this premium lean cut comes from along the spine. Low in fat and connective tissue, with a tender texture and rich flavour. Suitable for salads, wraps or serving as a steak with sides. Brush with oil, season and grill; best served rare to medium-rare. Grass-fed, grass-finished and pasture-raised without hormones, antibiotics, grain or grain by-products.
